Tasmania’s East Coast in Australia
Maybe you were not a Star Trek fan, but when we first saw this place, we imagined that this is where the Starship Enterprise land and setup a luxury spa resort. Yes, yes, I know what you Trekkies are say about not need to come to Earth because they all just go to Risa. Well, given how unique this place looks, for most of us this place might as well be on a different planet. Luckily, you don’t actually need a spaceship to get there.
The Saffire Freycinet opened a couple of years ago on Tasmania’s East Coast in Australia. Though very different from France, the climate here is very reminiscent of southern France, which wines to match. Wow! That just about sums up this place when you see the breathtaking vistas. One of the key ingredients of a very successful resort is its ability to quickly and skillfully indulge all your senses. And that is certainly the case here the moment you arrive. We are were almost overwhelmed with how gorgeous this place was, and that was before we even saw the beautiful suite we were staying in, the incredible spa, and before we devoured the amazing food.

Saffire has been built using a framework of environmental sustainability. Core principles underlying the development are “the protection of healthy sites” and the “healing of damaged sites”.
The original Saffire site was a caravan park and backpackers’ accommodation, and so had suffered a great deal of degradation and erosion. The Saffire site occupies a small portion of what had been cleared and eroded, and so a great deal of time has been spent re-vegetating the site with 30,000 native plants to encourage a return to its natural form.

The food prepared at Saffire’s restaurant Palate, by chef Hugh Whitehouse, an Australian icon and of master of fresh, local, imaginative food, was incredible. The restaurant they source some of the best that rich agriculture of Tasmania has to offer. From succulent grass-fed beef and lamb, full-flavoured game meats, fresh herbs and spices and seasonal fruit and vegetables, their chefs choose the finest regional produce to craft cuisine that highlights the best of Tasmania’s East Coast.
